Grandma Haugen’s unbelievable persimmon cookies!

1 cup persimmon pulp ( Really really  ripe, very soft)

1teaspoon baking soda

2 cups flour

1cup raisins

1 cup brown sugar

1/2 cup butter

1 egg

1 tablespoon….allspice and 1 tab. cinnamon

1 cup chopped walnuts if you like.

Peel the persimmons and take the seeds out, this is messy I use my hands it’s easier. Set all the pulp aside in a glass bowl and add the baking soda, let sit. This will turn to gel, it’s very cool.

Next cream the butter and sugar together, add flour, nuts and raisins and spice, along with the persimmon pulp. I like my cookies highly spiced and usually just add extra eye balling it. Drop spoonfuls on a cookie sheet that has been greased, they will be firm balls, don’t flatten as this will happen a bit when baking. They turn into yummy chunky hunks of goodness.

Bake at 350 degrees for about 9 min….all ovens react differently so watch them. I like mine soft so adjust accordingly. When you cool them put them in a tin or covered jar so they stay moist. These cookies are my family’s favorite cookie of the season and really, really addicting!
