Quinoa….. cranberry salad

2 cups Quinoa

2 large red peppers

1-8oz. bag of dried cranberries

2 cups of orange juice

the juice of 1 small lemon

1/2  bunch cilantro…chopped

drizzle of olive oil

salt and pepper

O.K. I love this salad, it’s made in the Deli at Whole Foods, because I really like to try to make my own (saves money and you can make a giant batch) I came up with this.

You cook the Quinoa as per the package info. I used 2 cups of dry quinoa so that cooks in 4 cups of boiling water. Once done put it in a glass baking dish and spread it out to cool.

Put your cranberries in the orange juice to soak and you can put these in the microwave if you want to for 2 min. If you don’t want to that’s o.k. also….just let them soak in the liquid and plump up.

Chop the red peppers very small, and chop the cilantro also

drizzle a very small amount of olive oil over the quinoa….and add salt and pepper

ad the rest of the ingredients, when I add the cranberries I spoon them out of the o.j. but you can add a bit of this for taste also. Mix it all up and put in refrigerator to marinate in all of it’s yumminess.

This salad is great to take to a party because it’s so pretty and fresh and you can make it way before….it’s an easy crowd pleaser!
