Chop 2 yellow crook neck squash into small,no, tiny pieces
Chop 1 large red bell pepper, tiny pieces
3 tomatoes chop
4 small cloves of garlic in your press
Chop half a bunch of cilantro or fresh basil whichever you are in the mood for.
Juice of 1 and a half lemons
small amount of olive oil just to dress the salad.
1/2 cup parmesan romano dry cheese blend.
1/2 box of small shells of what evere bite size pasta you like…….looks nice with bow tie pasta also.
Mix all together and let sit and melt together while the pasta is still hot. You can eat hot or cold.
Salt and pepper to taste
I saute the squash and pepper in a little oil with the garlic to take the bite( sting) out of it. The lemons make it happen!
